Refreshing Cranberry Drink


Cranberries are so nutritious and so full of vitamins! This drink is super refreshing and thirst-quenching...one sip will tell you why.


1 lb. fresh Cranberries
11 cups Water
3/4 cup Honey
1 Cheesecloth or Wrap 'N' Boil Bag


Wrap cranberries in cheesecloth and knot the bag. Place in a 4 quart pot, and add the honey and water to the pot. Bring to a boil. Simmer semi-covered over a medium heat for about 1 1/2 hours. Squeeze out cranberries and dispose of bag. Serve chilled.

Afterthoughts: The downside of this drink is that because this drink is so refreshing, I find myself reaching out for the cranberry drink instead of water whenever I'm thirsty.

Sweet N Savory Butternut Squash Dish


I used to not enjoy butternut squash fries. I felt they were too sweet for my likings... until I discovered this recipe and fries have become my favorite side dish! I hope you enjoy these as much as I do.

1 Medium Butternut Squash, cubed
2 Tablespoons homemade Mayo
2 Tablespoons homemade Ketchup
Salt & Spices of your choice

  1. Place squash in a pyrex 8" square dish.
  2. Add the mayo and ketchup and mix until well combined.
  3. Season with salt and spices.
  4. Bake at 375F for two hours, stirring every 20 minutes.
Afterthoughts: I enjoyed the leftovers for snack the following day right out of the fridge. No need to re-heat.

Latkes Update

I finally made the butternut squash latkes I've posted below. The latkes were a real hit! So yummy & moist! I would choose it anytime over potato latkes.
I made the following minor adjustments: I added 3/4 teaspoon salt, and a dash of black pepper to the batter. Alternatively, instead of shredding the squash, I used the blade that creates thin, shoestring-like strips. I also used extra light olive oil for frying.
I doubled the recipe with the hope that I'll have leftovers for tomorrow's dinner. However, later in the evening hubby was looking for an after dinner snack, and guess what he chose? .... Oh well... I'll have to think of another side dish for tomorrow's dinner.

5 Minute Delicious Side Dish

I came across this delicious Brocolli Souffle recipe in the Quick & Kosher cookbook by Jamie Geller. I'm excited to share this with you because of the 5 minute prep time. I don't know about you, but I'm always short on time. I hope you enjoy this as much as my family and I did!

2 lbs. frozen chopped Brocolli Cuts, thawed and drained
1 cup homemade Mayo
4 Eggs
1/2 Tablespoon Kosher Salt
1/4 teaspoon Black Pepper
1 pinch Cayenne Pepper

  1. Preheat oven to 375F.
  2. Liberally grease a 9 inch round baking dish.
  3. In a large bowl place brocolli, mayo, eggs, salt, black and cayenne peppers, and mix well.
  4. Pour brocolli mixture into prepared baking dish.
  5. Bake for 1 hour and 15 minutes until center is set and edges are golden brown.

Pink Applesauce


I used both my mother's and my mother-in-law's applesauce recipe, made some minor adjustments, and ended up with the most delicious dessert! I enjoy this applesauce particularly after dinner since it settles my stomach and satisfies my sweet tooth.

15 Large Cortland Apples
1 lb. Fresh Cranberries
1/3 cup Water
1 Cheesecloth or Wrap & Boil Bag
  1. Peel & cut each apple into 16 small chunks.
  2. Place water in a 12 quart pot and add the apple chunks.
  3. Wrap cranberries in the cheesecloth and knot the bag. Set aside.
  4. Cover pot and simmer on a very low flame (the lowest possible). Stir the apples every 1/2 hour.
  5. Add cranberries to the apples approximately 2 hours into cooking time. Cook for 1-2 more hours, until the apples have softened and dissolved considerably.
  6. Squeeze out the cranberries from the cheesecloth and dispose of bag.
  7. Blend the apples with an immersion blender.
  8. Enjoy : )

Hannukah is almost here! Yippee!


Hannukah is around the corner, and I'm looking forward to making yummy SCD latkes! While browsing through recipes, I came across one on Elana's Pantry that looks really great. I'm looking forward to making it, and I hope you all enjoy it too! Happy Hannukah : )

Buttenut Squash Latkes

4 cups Butternut Squash, peeled & grated
1 small Onion, peeled & grated
3 Eggs, whisked
oil, for frying

  1. In a large bowl make latke batter by mixing together squash, onion and eggs.
  2. Use your hands to form batter into 3 inch patties
  3. In a large skillet, heat oil
  4. Fry patties on each side over medium heat until golden brown and crispy
  5. Remove latkes from pan and place on a paper towl lined plate to drain excess oil
  6. Repeat Steps 2-4 until batter is used up
  7. Sprinkle with kosher salt
