I'm in love with my newly discovered <a href="http://www.digestivewellness.com/itempage-96258-24-23-1832.html">SCD dijon mustard</a>. Formulated by the mustard experts in France, those guys really know their work. With an authentic mustard flavor and just the perfect touch of spice, this one puts the conventional mustard to shame. Besides for being a great condiment, its creaminess makes it a perfect partner to mayo. I use it in my mayo salads, with astounding results. Here's a salad we enjoyed this weekend:<br />

<strong>Spaghetti-Carrot Salad</strong>:<br />1 large Spaghetti Squash, halved lengthwise and seeded<br />2 Carrots, peeled<br />2 SCD <a href="http://www.bubbies.com/prod_pure_kosher_dills.shtml">Dill or Sour Pickles</a>, diced<br />1 heaping Tblsp <a href="http://www.digestivewellness.com/itempage-96258-24-23-1832.html">Mussette Dijon Mustard</a><br />4 Tblsp <a href="http://digestivewellness.blogspot.com/2012/02/mayo-in-minutes.html">Homemade Mayo</a><br />2 Tblsp Honey<br />1 tspn Salt<br />Juice of 1/2 Lemon<br />
<br />1. Preheat oven to 350 degrees F. Lightly grease a baking sheet. <br />2. Place spaghetti squash cut sides down on the prepared baking sheet, and bake 40 minutes in the preheated oven. Remove promptly to ensure crispy spaghetti strands. Set aside to cool enough to be easily handled. <br />3. Shred the carrots in the food processor, using the blade that creates thin, shoestring-like strips. <br />4. Use a large fork to strand the stringy pulp from the squash, and place in a medium bowl with the carrots. <br />5. Add pickles and rest of the ingredients and mix well.<br />6. Marinade in the fridge for one hour. Serve chilled.<br />

I have not looked at standard mayo! The little bit I had left in my fridge I've used for my family... for my taste buds knew better than plain mayo.<br />I use Green Mayo a lot in my veggie salads, on cold steamed butternut squash cubes (like potato salad), to dip veggies/chicken fingers/burgers, and for tuna/egg/avocado spread. It's tasty enough to spread on fresh fish or chicken cutlets before baking or broiling... you'll find yourself using this in soooo many dishes!<br /><br /><strong>2 free range eggs<br />1 1/4 tspn <a href="http://www.digestivewellness.com/itempage-1627-24-18-1676.html">sea salt</a><br />1/4 tspn freshly ground black pepper<br />1 Tblsp <a href="http://www.digestivewellness.com/itempage-2080-24-23-1629.html">yellow mustard</a><br />4 cloves garlic<br />2 Tblsp white wine vinegar<br />40g fresh parsley leaves (1 cup)<br />5 cups cold pressed sunflower oil (any liquid oil should work)<br /><br /></strong>1. In the bowl of your food processor, using the knife attachment, blend the first seven ingredients for three minutes.<br />2. Add oil, drip-by drip while machine is on high. Here's my tip: take a 7 oz. or 9 oz. plastic cup, and make a tiny hole on the bottom with a sharp pointy knife. Place the cup over the food processor spout and fill it with oil. You can then walk away, only to return to refill the cup with more oil.<br />3.Place mayo in a <a href="http://www.digestivewellness.com/itempage-2865-24-31-1657.html">2-quart glass jar</a>.<br />4. And while we figure out the method to make raw eggs shelf stable (any suggestions welcome), I'm excited to share with you a super easy method for mayo making. It's so quickie, that I find myself preparing the mayo while my crew is already at the supper table waiting for their salad dressing. And best of all... cleanup is a cinch!<br />
<strong>2 free range eggs<br />3/4 tspn </strong><a href="http://www.digestivewellness.com/itempage-1571-24-18-1711.html"><strong>sea salt</strong></a><br />
<strong>1 Tblsp white wine vinegar<br />1/2 tspn ground mustard<br />2 cups oil </strong><br />

Place eggs and salt in a <a href="http://www.digestivewellness.com/itempage-9328-24-31-1796.html">32 oz. glass jar. </a> Place the handblender on the bottom of the container, and beat on high speed for 15 seconds. Add vinegar and mustard and beat for 10 seconds. Add oil 1/4 cup at a time, while mixing on high speed. Go around in circles with the blender, so that the oil incorporates well. This should take up to four minutes. Store mayo in fridge for 14 days.<br />

I make this dinner at least once a week, and surprisingly do not get bored of it in the least bit...<br />I love turkey! It satisfies me so much more than good 'ol chicken, yet does not have any of the heaviness of meat. More so, due to its tryptophan content, turkey is a relaxation-promoting food, just what I need after a full day of work! So... here's what you need for this dinner:<br /><br />1 large onion, peeled and sliced<br />1/2 head garlic, peeled<br />4 mini turkey drumsticks<br />1 pkg. pre-cut butternut squash (available in most fruit stores)<br />1 bag frozen sugar snap peas<br /><br />In the morning, before heading out to work, place onion and garlic cloves in a 4 qt. pot. Place turkey directly above. Do not add any water. Cover pot, and let cook on the lowest possible flame. Rush out to work. When you return home (6-8 hours later) dump squash and peas on top of turkey. Allow to cook for one more hour. Enjoy your one-pot delicious dinner. Mix on medium speed until it forms a smooth yet fatty dough.<br />7. Form into medium sized balls and flatten a little. Place onto the two prepared baking sheets.<br />8. Bake on top rack of oven only (in shifts) for 10 minutes.<br />9. Remove from oven. The cookies will appear raw in the center and lightly browned on the edges. They will harden as they cool.<br />10. Store in the freezer and serve frozen.<br /><br /><strong>Important notes</strong>: 1) The cookies are not the greatest at room temperature. Freeze completely before tasting. Pour honey into a medium saucepan and bring to a boil. Cook on low heat for 10 minutes. Stir honey every few minutes.<br />2. Turn off flame, and add the rest of the ingredients. Stir well.<br />4. Line a large baking sheet with parchment paper. Pour mixture into baking sheet.<br />5. Place pan in the freezer, and freeze until rock solid.<br />6. Break into clusters, and store in the freezer.<br />7. Remove upper pot from the hot water pot and let cool for a few minutes.<br />4. Prepare little candy cups or chocolate molds. Ladle about 1 Tbls. mixture into each.<br />5. Freeze until firm, and serve frozen.<br />6. What a jam-packed 24 hours, full of fun and meaning! I'm sure it wasn't easy receiving all those yummy shalach manos that you weren't able to touch... at least it hasn't been for me. But for Debby things were different. Someone who really cared about her actually made her a beautiful SCD shalach manos! How very special! Debby was so moved and it so inspired her to continue doing the SCD faithfully! I'll let Debby have her word: <em>"I received a very special Shalach Manos. I was totally speechless! The food was delicious, but the way it was packaged, with such creativity made is so much more special. You can see from the pictures. The effort to hot glue all those bows on, and the fact that each type of cookie was put in its own clear plastic box, completed the entire package. It’s a bit hard to see what’s inside so I’ll tell you: the middle is a big cashew cake with two types of frosting plus some crumbs on top. Yum!! One little box had tiny hamentashen, another had these jelly roll cookies and thumbprint cookies, another had taffy type of candy which is a sucking candy if you eat it frozen, and the last had biscotti with the ends dipped in some candy (I think the same as the taffy) and then in coconut. Each item was so delicious. I enjoyed having my own stash of treats that was given to me, and didn’t feel like I missed out on Purim one bit. As much as I’ve gotten used to only eating food that I made myself, it was a real treat to get this Shalach Manos full of yummy food that was new to me that I didn’t slave over. You know what I mean? Sometimes it’s just so nice to be served and not have to make everything yourself! Place all dough ingredients in large bowl. Mix well.<br />2. Refrigerate dough overnight.<br />3. With a rolling pin, roll out dough between 2 sheets of waxed paper to approximately 1/4 inch thickness.<br />4. Use a large round cookie cutter or a drinking glass (dipped in nut flour) to cut circles in the dough.<br />5. Place a teaspoon of jam in center of each circle.<br />6. Fold all 3 sides of circle towards center and pinch sides together, forming triangles.<br />7. Place on parchment-lined cookie sheet.<br />8. Bake for 20-30 minutes on 325F.<br />9. When I just need that piping hot tea with something gooey?? I always make sure to have on hand <a href="http://www.digestivewellness.com/itempage-1022-24-10-1557.html">fresh medjool dates</a>, <a href="http://www.digestivewellness.com/itempage-1595-24-18-1759.html">cocoa butter</a>, and <a href="http://www.digestivewellness.com/itempage-1029-24-11-1565.html">pecan flour</a>. Here's the method: Take a small chunk of cocoa butter, place it in a ziploc bag, put into a glass measuring cup, and pour some boiling water over it. The cocoa butter will melt in just minutes. Cut each date in half, remove the pit, dip each half into the melted cocoa butter and then coat with a generous layer of pecan flour.
