My Favorite Lunch


I make this lunch all the time, and can't get enough of it: I take a baked barbeque chicken top from last night's dinner, debone it, and mash it with homemade mayo. It should look like tuna at this point. I then add a large veggie salad, and mix it all together. The results: a very satisfying, wholesome lunch that keeps me going for hours : )

Time for Dinner!

Here's a yummy complete dinner my family enjoyed: Crispy Chicken, Squash Fries, and Steamed Green Beans.
How to make Crispy Chicken: Preheat oven to 500F, and bake chicken bottoms for 15 minutes on both sides. Reduce heat to 350F and bake chicken for another hour.
How to make Squash Fries: I've used fairytale pumpkin squash I picked up at farmer's market, and it was great. You can use butternut squash for the same results. Preheat oven to 425F. Cut squash in thin slices by hand or with a slicer. Toss them in olive oil, and sprinkle with sea salt and black pepper. Place slices single layered in a pyrex dish. Bake until crisp. No turning is required.
For the green beans, use fresh green beans, and steam until soft. Enjoy your dinner in good health : )

Wonderful Shopping Experience at Farmer's Market


I had a great time shopping at Farmer's Market! They have all types of winter squashes, some of which I've never seen before. The price was unbeatable at $0.50/lb. I'm really big on winter squashes, and so, I stocked up! For dinner, I chopped up some butternut squash, fresh green beans, and added some frozen peas. I steamed these veggies with a bit of sea salt. The results were a very refreshing and delicious side dish. I felt like a great mom, watching my two toddlers asking for more and more!!

If you have a farmer's market in your area, take advantage! The one in my area will be around only until Nov 15th.

Farmers' market produce is renowned for being locally grown and very fresh. Farmers' markets are markets, usually held out-of-doors, in public spaces, where farmers can sell produce to the public.

Post Holiday - Back to Routine
