Chocoholics Beware!!


Chocoholics beware!! These cookies are addictive! So different than the typical soft nutty cookies. They're crispy and so rich in taste! My hubby's reaction after tasting these were - now you're talking!! This one so doesn't taste diet! The great thing is that they're a cinch to make! You'll have the dough complete in just minutes!
These are quickly becoming the new favorite cookie in my household! I love them alongside a ginger-peppermint tea - ahhhh.... so refreshing!! My kids will do anything to deserve these! I was fortunate enough to find this recipe posted on the BTVC-SCD yahoo group, posted by Joe P. "svt3183". Thanks so much Joe!!

2.5 cups blanched almond flour
1/4 teaspoon salt
1/4 teaspoon baking soda
10 tablespoons grated Cocoa Butter (about)
1/2 teaspoon vanilla extract
1/2 cup honey

1. Combine dry ingredients in a large bowl including cocoa butter.
2. Add honey to dry ingredients and stir together. Do not go crazy trying to get it fully mixed yet.
3. Pop the bowl in the microwave for about 1 min around 70% power and this will melt the cocoa butter.
4. Finish mixing completely.
5. Form about tablespoons size balls and slightly flatten onto a parchment lined baking sheet.
6. Bake at 350F for 8 minutes. Rotate pan and bake an additional 2-4 minutes until golden.
7. Cool to room temp then refrigerate. These are best cold from the fridge or freezer.
8. Enjoy

Just wanted you to know that because I was too lazy to grate the 10 Tbl. of cocoa butter, I just melted a bit and measured 1/2 cup of liquid.
It worked great!

Are there really no eggs in these? I'm afraid to try them because I've tried cookie recipes before that had no eggs and they were a disaster.They were burned on the outside (from waiting for them to cook) and raw/mushy on the inside.

No need to worry at all! These cookies have that crunch BECAUSE they don't have any eggs. The cocoa butter makes up for the eggs, and gives it all it needs! Happy Baking!!

I made these last week and my son is begging me to make more. He has been SCD for 2 years and hasn't had much in the way of "treats" for an 11 year old. He thinks these cookies are great! I melted the cocao butter too and it worked just fine.

hello -- i know this question is unrelated to this post but wanted to ask someone about a yogurt maker before i purchase one. i need to buy a yogurt maker to make the SCD yogurt. i was wondering if you have had success with any specific brand. any advice would be appreciated.

This is the best dessert I have found so far since I put myself on the diet in September 2011. After they cool I put them in a container in the fridge, and look forward to snacking on these. Tasting like chocolate and being crispy is a great treat, thanks for posting!

The BEST SCD cookie recipe I've had so far! And it's so easy and simple ingredients. The only problem is that I could eat the whole batch in a day!

Hi there, I've just purchased some cocoa butter and am keen to try this recipe but my son hasn't had almonds before. Is it possible to substitute the almond flour with a different gluten free flour? Thank you, I'm so excited about finding an eggless, dairy free soy free biscuit recipe!

It will work nicely with other nut flours like cashew or hazelnut. Since the gluten free flours are not SCD legal, I have no experience using those whatsoever. Good luck & happy baking!
