A Cookie Lover's Dream

The "Chewy Macadamia Nut Biscuits" from the Healing Foods cookbook is simply beyond delicious! The unique combination of dates, coconut, and macadamia transforms this cookie into a dream of a dessert! When my kiddoes finally retire for the night, I relax with some cookies, a piping hot peppermint tea, and my favorite magazine, ahhhh....
For those of you who don't own this cookbook, here's the recipe (with permission from author):
1 egg
3/4 cup honey
1/2 cup macadamias - chopped roughly (yeh... took forever till I got to the nut store... but well worth it)
1 cup dates - chopped roughly
1 cup shredded coconut

Preheat the oven to 300F. Line a baking tray with baking paper.
Combine the almond flour with the baking soda. In another bowl, whisk the egg with the vanilla extract and honey. Combine with the almond flour and add the macadamias, dates, and coconut. With moist hands shape the dough into ping-pong size size balls and flatten when placing onto the lined baking tray, leaving enough room for expansion. Bake for about 15-20 minutes until the biscuits have turned a golden brown color. Cool and store in an airtight jar.

P.S. I'm not having any luck with making cocoa butter ice cream. I find that the taste is just too profound for ice cream. I'd love to hear your ideas...

I made these cookies tonight and they are fabulous! The macadamia nuts are a must, they add great flavor and texture. I did sub dark chocolate chips for the dates but next time I will use dates or raisins. Thanks for sharing this great recipe!

Just to clarify for SCD readers: chocolate chips are not SCD legal.

As an update: for that ultimate treat, these cookies should be eaten only right out of the freezer.
These cookies are so yum, that I really have a problem stopping at just a few. I always return to the freezer for more. Any ideas for self control?

So many recipes call for almond flour. I am sensitive to almonds. Can you succesfully replace almond flour with another nut flour? Thank you for a wonderful blog!

Almond flour is the most popular flour for the SCD diet. The reason being that almonds are very mild tasting, and have a great texture. All other nut flour will work fine, though there will be a "nutty" taste. The most popular subs are hazelnut and cashew flour, since the color is light like almonds. The other nuts are much darker. Hope this helps.

It took me a while to get the ingredients but I'm so happy I made these. They remind me of chewy chocolate chip cookies. I liked them from the freezer, but if I wait a few minutes, they are chewy rather than frozen solid. The macadamia nuts and dates are a fabulous combination! If you haven't tried this cookie - don't delay! I plan on making my second batch only 10 days after I made my first...

I find that if I substitute cashew flour for almond flour, I have to use less oil or butter (whichever is in that particular recipe). The cashews are oilier! So please keep this in mind if you substitute!! Also, I've tried walnut flour, but I find that ends up tasting a bit bitter after baking. :)
