The cashews are oilier! So please keep this in mind if you substitute!! The reason being that almonds are very mild tasting, and have a great texture. All other nut flour will work fine, though there will be a "nutty" taste. The most popular subs are hazelnut and cashew flour, since the color is light like almonds. The other nuts are much darker.
