Peanut Butter Clusters

These delightful clusters are based on the "Peanut Butter Cups" I've posted previously. Believe it or not... they're even better tasting than the cups!

3/4 cup honey
1 cup melted cocoa butter
1 16.5 oz. Award Winning crunchy peanut butter
1 1/2 Tbls. vanilla extract

1. Pour honey into a medium saucepan and bring to a boil. Cook on low heat for 10 minutes. Stir honey every few minutes.
2. Turn off flame, and add the rest of the ingredients. Stir well.
4. Line a large baking sheet with parchment paper. Pour mixture into baking sheet.
5. Place pan in the freezer, and freeze until rock solid.
6. Break into clusters, and store in the freezer.
7. Hide in the very back of the freezer for portion control purposes : ) Print this post

We made these and thought they were really good. The honey sort of sank to the bottom though. Thanks for the recipes. We're 4 months into SCD and finding recipes is a blessing.

This recipe is... UNBELIEVABLE! You'd think your eating chocolate! Its amazing and the way it melts on your taste buds with the assorted tastes, it cant ever go wrong! You have to make sure you follow the recipe right in order for the ingredients to stay together and not separate. If they do separate, just try it again! You'll get the hang of it!

These are amazing! I had no problems with separating. I took them to work and everyone in the office thought they were amazing too!

3/4 cup honey . . .does anyone know if there is the possibility of a blood sugar problem with all the hone we use in our baking?
