SCD Mashed Potatoes


I am on a high! I was looking for an alternative for good ol' mashed potatoes & discovered this awesome recipe - this one's really worth the try!
You'll need a steamer for this recipe.
1 medium Butternut Squash
1 large Onion, cubed
2 Tbls. Coconut Oil
2 Tbls. Olive Oil
2 Tspn. Honey
Salt, to taste
2 shakes Black Pepper


1. Peel and seed the squash, and cut into chunks.
2. Steam squash in steamer until very soft. Once it's done, shut the heat and let sit in covered steamer for 30 minutes.
3. Meanwhile, heat coconut oil in a skillet over medium heat. Saute onion in oil until well caramelized.
4. Transfer squash to a medium bowl. Use potato masher to mash squash until well mashed.
5. Add the fried onions and the rest of the ingredients to the bowl. Mix well.
6. Use ice cream scoop to serve.

yes-they ARE great. even more fussy hubby admitted ! squash latkes too !!!!

2 questions;
1) is the cheese "dripper" really good? can someone who uses it please report.
2) i have never managed to successfully make meringues with honey, they always "separated" while baking. any tips pls?

I"m wondering why you need a steamer? Why can't I steam the squash in a pot with an inch or so of water?

You may try it without a steamer, however I feel that it's best if the squash does not absorb any water at all - that way it'll have the consistency of potatoes.

You can also make these without a steamer by cutting the butternut squash in half lengthwise, deseeding it, and laying the two halves on a baking sheet (skin side up). Cook in the oven for about 1 hour at 350 degrees or until it is easy to spoon the insides out. I just made these mashed "potatoes" for the first time tonight--this is one great recipe! I think this is going to become one of my staple foods. Thanks for sharing this Esther!
